Cascavel, Monts & Vertiges Ventoux, AOC Ventoux, Rouge. Syrah, Grenache aus der Rhone, Frankreich. Conventional viticulture 40-year-old vines. Traditional hand-picking. Aged in oak barrel. This cuvee can wait a few years to fully express its potential, but is already generating exceptional pleasure even now. This wine has a beautiful deep ruby red colour w The nose is powerful and complex, combining aromas of black fruit, vanilla pods and mocha, while showing great purity. The palate is full and concentrated with a nice tension. We find jam-like fruit aromas and a nice minerality (slate), all balanced and fresh. With remarkable elegance and lovely length on the palate, a regal finish with cherry and brandy notes. Delicious with red meat in a sauce, boar stew, venison, duck breast.

Located between the Monts du Vaucluse and the Luberon massif, near Isle sur la Sorgue, Caravinsérail is distinguished by the experience of its managers, wines that constantly seek authenticity, freshness and elegance, and a naturally proactive culture of striving for excellence.

Most of the wines come from organic farming or from the UNESCO-listed Mont Ventoux biosphere reserve.

In March 2000, Raphael Trouiller founded Domaine Cascavel in the Côtes du Ventoux appellation. Ownership and management of the domaine have since passed to Xavier Logette. A total of 9.5 hectares of vineyards are divided into 14 small plots and are planted with 25- to 60-year-old vines. Everything is grown purely organically to produce wines that are true to the terroir and have the soul of the south. Raphael’s oenologist Didier Robert, who is the tutor and boss of none other than Philippe Cambie. Despite an interim change of ownership, Didier has been cellar master at Cascavel continuously for 18 years. In Côtes du Ventoux, the grapes ripen significantly later than in the warmer Rhône valley, the wines are fresher and more differentiated, but still have the velvety warmth characteristic of the region. Like the entire Ventoux region, the winery led by Xavier Logette and his highly experienced winemaker Didier has been on a qualitative upswing for years, producing brilliant wines from the somewhat fresher terroirs on the Ventoux, which marks the geographical transition from the Rhône valley to Provence.

Syrah: a strong blue grape of very high quality. This grape is usually not easy for wine growers, but it is the seasoning for many Côtes du Rhône Villages. Delivers incredibly powerful and complex wines under optimal conditions. Have a high tannin content, without being stiff. The Syrah grape quickly suffers from poor fruit set in cool weather during flowering (coulure) but is not very susceptible to grape diseases such as Oidium.

The Grenache grape grows in warm and dry areas, such as the South of France, Spain, South America and also California and Australia. This grape is also the most cultivated type of grape in the world for producing red . As already mentioned, the grape is called ‘Garnacha’ in Spanish. But you may also know it as ‘Cannonau’, which is what it is called in Sardinia. This grape is a real holidaymaker, and needs sun and hot stones to fully bake and ripen. The Grenache contains little tannin and is sensitive to oxidation, so it is better to drink it immediately instead of storing it. The grape has a thin skin and is therefore lighter in color compared to other red wine types. The more grapes per bunch, the lighter the color. The high sugar content is typical of this wine and also makes it stronger in alcohol content, but also sweet and firmer. Grenache wines can be recognized by a taste of white pepper, herbs and fruit. In terms of scent, you can smell almost the same ingredients: blackberries, pepper, cherries, berries and a slightly spicy scent.
