Chateau Les Fontenelles Blanc Sec. Semillon and Sauvignon Blanc from Bergerac, France. The secret to the finesse and fruit of this magnificent dry wine lies in the preparation process, namely the elevage sur lie, or lees created by the dying off of yeast cells. This process has been successfully applied to Muscadet sur Lie since time immemorial. This allows the wine to retain its original aromas, which keeps it very fresh and fruity.

Sémillon, for dry but also sweet Bordeaux wines. The ripe grape is rich in sugar and very sensitive to noble rot (pourriture noble). The world’s most beautiful (sweet) wine, Sauternes, is made from this grape. The character of a young Sémillon wine depends on the region. In cool areas: fresh and fragrant (sauvignon blanc esteem) with a fairly full taste. In warm areas: subdued scent of pebble, full and sometimes cumbersome in taste with a low acidity. Characteristic is the mild bitterness in the taste and aftertaste.

Sauvignon Blanc also called fumé blanc, is the most important white grape of Bordeaux. Fresh, fruity wines are made along the Loire. In Sauternes, the grape is blended with the sémillon. Sauvignon blanc spread to the rest of the world through migrants in the 18th century. In wine regions with a temperate climate, the grape feels at its best. Sauvignon Blanc, locally called Surin, is one of the oldest grape varieties planted in France. Sauvignon Blanc has a characteristic perfume of flowers and gooseberries, is spicy but can be both astringent (around the upper Loire) and plump and round. The wines usually have high acidity
