Castello Della Sala San Giovanni. Cuvee from Umbria, Italy. A light, straw yellow white wine characterized by notes of peach, citrus and pineapple. This wine forms a harmonious whole between structure and acidity, with a lively palette and a long aftertaste.
A combination of 50% grechetto, 25% procanico, 25% pinot bianco, viognier and riesling that was fermented at a cold temperature for the purpose of fraicheur.

: is a good quality grape from central Italy that gives structure, richness and a nice nutty and leafy flavor to many white wines from Umbria. A good Orvieto owes a lot to grechetto and this also applies to the white wines Torgiano and Cervaro from Antinori. Grechetto is often mixed with trebbiano, malvasia and verdello. The yield is small, but grechetto is sufficiently resistant to diseases. Good Vin Santo (dessert wine) is made from it.

Procanico Officially, the scarce procanico grape is synonymous with the trebbiano toscano and genetically they are also identical. However, there are notable differences in terms of leaves and bunches. In addition, the procanico wine is much more aromatic, balsamic in tone and spicier. More personality. The name of the grape is said to be derived from the Latin ‘praecanere’, which means ‘to enchant’. We find the rarely planted procanico on the border of Tuscany, Umbria and Lazio. It does very well on the volcanic soil around Lake Bolsena. In the early 1970s, procanico was often replaced by trebbiano toscano clones that were more productive, but also of lower quality. Fortunately, there are winemakers who are restoring procanico.

Pinot blanc is often associated with the Alsace or Alsace, but this grape originally comes from Burgundy. It is therefore also permitted, but not often practiced, to grow this grape in Grand Cru Vineyards.

Outside France, Pinot Blanc is widely grown in Northeast Italy, under the name Pinot Bianco. In Austria and Germany the grape is known as ‘Weissburgunder’, or white Burgundian. Outside Europe, the Pinot Blanc grape is grown new world countries United States, Canada, Argentina and Uruguay. In every area where Pinot Blanc is grown, the grape has a different taste and appearance. Yet this grape is always perfect for use in a blend for sparkling wine. For example, the grape is allowed in champagne blends. Pinot Blanc is also often mixed with Pinot Noir, Chardonnay and Pinot Meunier.

Viognier: an extremely vulnerable white grape of very high quality that forms the basis of Château Grillet and Condrieu. This grape is also allowed up to 20% in the red Côte Rôtie. Viognier produces a delicate, softly scented white wine. More and more quality-conscious wine growers are planting Viognier and as a result their white wines usually increase enormously in quality.
