Davide Bevione Dogliani Superiore DOCG “Bric dj Iriva”, Dolcetto uit Piemonte,Italië. From the oldest vineyard comes this beautiful ruby red purple-tinged grape. Single vineyard with low production. Hand-picked and sorted for the best grapes. Pleasant tannin Full, warm and balanced with a long finish. Fermentation in steel tanks at a controlled temperature (25/30 °C). Malolactic fermentation also occurs at a controlled temperature. After aging in steel tanks, the wine rests for 12 months in large oak barrels. This wine is suitable for storage. This wine is suitable for storage. Dolcetto is an early ripening blue grape. This grape is characteristic of Northern Italy and Piedmont in particular. Dolcetto means “little sweet”. The grape produces a dry red wine with often firm tannins, which can be stored for years, especially after aging in wood. There are several DOC(G)s in Piedmont where Dolcetto is the most important grape. These are Alba, Asti, Acqui, Langhe, Monregalesi, Ovada, Diano d’Alba and Dogliani. In general, the wine Dolcetto di Dogliani (recently: Dogliani) is considered the best. This grape produces a wine with a relatively low acidity, soft tannins, while it gives aromas of lots of black fruit, coffee and certainly a hint of violets. The wine goes well with pasta and tomato sauce, lamb and hard aged cheeses such as Pecorino. In Liguria, where this grape is better known as “Ormeasco”, we find the grape that has much less fruit in its aroma and is much earthier in taste.
