Henry Of Pelham Revel Baco Noir & Cabernet from Niagara, Canada. This juicy and intense “Cab Noir” is based on Cabernet Sauvignon, Cabernet Franc and Baco Noir grapes. Lots of aromas of black cherry and blueberry with scents of vanilla and dark chocolate. Very pleasant red wine with barrel aging and soft tannins. Ideal with barbecue and red meat dishes or lamb chops.

The Baco Noir is an early hybrid variety. Originally it was also grown in its native France, but due to European Union regulations banning the use of hybrid varieties for commercial purposes, this variety is now mainly grown in the cooler areas of the United States (New York, Michigan, Mississippi, Wisconsin, Pennsylvania and Oregon).

Cabernet Sauvignon is best known in Bordeaux where, together with merlot and cabernet franc, it produces high-class wines. It needs a lot of heat to ripen, otherwise it will become green and juicy with a taste of green pepper. Too much heat makes it soft and jam-like, with a taste of blackcurrants. Cabernet Sauvignon produces very aromatic wines with scents of blackcurrant, vanilla, spices (pepper), tobacco, plum, cherry, toasted bread and cedar. The wines usually have a long shelf life, have a lot of tannin and in principle have to mature in barriques.
