La Petite Ferme Baboon Rock Unwooded Chardonnay

Chardonnay from La Petite Ferme of Franschoek, South Africa. Because the chardonnay is planted higher in the mountains, it is sometimes plundered by baboons, a species of monkey; in 2008, 40% of the harvest was plundered by them! The chardonnay floats on its fruit, full on the palate and some zest, fresh apricot and orange blossom ending with honey.

I serve with this, sauerkraut with timuth pepper. Apple pairs baked in butter, or grilled quince in smoked paprika. Along with it smoked eel, smoked Haddock and warm smoked salmon. Add another beurre blanc sauce with finely chopped chives. A few baby potatoes may be added as well.
