Grenache from Av Bodeguers of Emporda, Catalonya, Spain. 90% Grenache and 10% Merlot. All grapes are harvested separately in our vineyards as soon as they reach optimum ripeness. Separately pressed and fermented by terroir and by variety. Fermented in small 1,500-2,000 kg stainless steel tanks (microvinification). We select the yeasts and temperatures that best suit this variety. Once the must is fermented, we age the wine for 12 months in French oak barrels. We then blend different varieties and bottle the wine which matures for at least 18 months in the cellar. Violet color of cherries. Firm nose, perfumed, full and well defined. Contains mature fruit notes such as cherries, raspberries, figs, plums and lots of minerality. Spicy background (licorice) soft and pleasant. Refined tannins fresh, structured and with presence.

I like to serve this wine with: Rub a rack of lamb with a good curry powder and fry in clarified butter. Let it cook slowly in the oven at 120 degrees rosé. Together with peeled shallots

For the sauce; brown equally finely chopped shallots, along with black pepper in butter along with a little brown sugar, richly deglaze with red wine and flambé (1 dl per guest!). Add a bay leaf and reduce almost dry. Add lamb stock or broth. Adjust thickness and flavor. If necessary, with a dash of good quality red wine vinegar.

accompanied by a vegetable dauphin. Cut potatoes, carrots, celeriac and zucchini into matchstick size ( can be done with a grater or Japanese mandolin). Mix everything together with a little salt and white pepper. Heat a steel pan, then put 2 mm fat/olive oil/gan fat ( to taste), and fry the vegetable mixture like a Swiss rösti. Cut into wedges.
