VIGNERON INDÉPENDANT: CHRISTINE ET VINCENT

Piot-Sevillano is based in Vincelles; a village of some 900 inhabitants along the Route du Champagne in the Marne Valley, known for its high-quality Meunier. Piot-Sevillano has 7.5 hectares of land and Christine is the 10th generation of winemakers since 1700. Since 2015, they have been HVE (High environmental value) certified. Yield: 70% Meunier, 15% Pinot Noir and 15% Chardonnay, half of which was still planted by Christine’s grandfather. The limited edition series of ‘moment of eternity’ are made in an edition of 640 bottles. Piot-Sevillano is a Recoltant-Manipulant winemaker, which means the entire process of making champagne is done by his family; working in the vineyard, harvesting and pressing the grapes, letting the wine ferment all the way through to bottling, aging in the cellars and sales.

Chardonnay, the grape of white Burgundy and Champagne, is planted all over the world. Delivers good to very good wine with a full, dry taste. Chardonnay is a grape that does not have a clear character, which depends on the terroir (soil and climate) and the method of wine making. Chardonnay lends itself very well to maturing in wooden barrels.

Pinot Meunier: a blue grape of reasonable to good quality and is a mutation of the very well-known Burgundian grape Pinot Noir. The name refers to flour (and miller) because the leaves of the grape almost appear to be dusted with a layer of flour due to the hair present. Is very suitable for making sparkling wines and thrives in relatively cool wine-growing climates. Is the most planted grape in Champagne and makes an indispensable contribution to most Champagne blends. Also called farineux noir or noirin enfariné in France. Pinot Noir: in an old text from 1659 the grape is also called Rotkläffner. Pinotnoir is a noble blue grape from Burgundy from which all great Burgundy wines are made. The grape mainly grows in a cooler climate and is very dependent on soil conditions. Therefore, it is not an easy grape variety to grow.
