Xarel.lo and Forcada by Torres from Penedes, Spain. Light yellow color with a pure, radiant appearance. Delicate and seductive, this wine offers a symphony of fruit aromas of lemon, grapefruit and mandarin. Fresh, lively and juicy on the palate. The aftertaste is slightly spicy with fine acidity. Aperitif and with Seafood. Xarel- Lo This grape used to cause a lot of trouble in Cava circles. The grape suffered from oxidation problems, which gave the Cavas a strange rooty taste. Today this problem has been solved and it provides the base, the weight, the power and the alcohol that no Cava can do without. The Xarel-lo is indispensable in Spanish Cava. It adds the power and the alcohol. One of the latest developments is a blend of Xarel-lo – Monastrell. This experiment was successfully applied by Freixenet, one of the leading Cava producers from Catalunya.   Forcada. The most fascinating research project we are currently conducting is the recovery of ancestral varieties. It was started in the early 1980s by Miguel A. Torres and its aim is to discover grape varieties that survived the phylloxera plague that ravaged European vineyards in the late 19th century. Today, the fifth generation of the Torres family is a fervent supporter of this project, with the ambition of making unique, exciting wines based on forgotten varieties. They are small wine gems that also stand out for their resistance to drought and high temperatures, making them particularly interesting in the light of the new climate scenario. Of the more than 50 varieties recovered so far, six have caught our attention. One of them is Forcada, a very aromatic white variety with a pronounced acidity, which we use to make this single-varietal wine in very limited production.
