Torres Fransola Sauvignon Blanc D.O. Penedés uit Penedés, Spanje. 95% Sauvignon Blanc and 5% Parellada, grapes from which the wine is made, are vinified separately and later blended. Half is fermented in wood and then the wine undergoes a short 6-month aging in American oak barrels. The other half is fermented and aged on stainless steel vats. This wine comes from a Single Vineyard and has a rich, fruity (passion fruit and melon) bouquet and a full long finish in which one recognizes the flavor of asparagus.

Parellada a white grape of good quality. Mainly used in Penedès in Northern Spain for sparkling wine. Contributes freshness and fruitiness. The parellada is often served together with the macabeo and xarel-lo mixed, and can also be mixed with chardonnay, and sauvignon blanc. It also makes still wines that are light, fresh and softly floral and have good acidity and a low alcohol content for Spain (9-11%). The grape is also found in the Costers del Serge wine region. Parellada wines should be drunk young.

Sauvignon Blanc also called fumé blanc, is the most important white grape of Bordeaux. Fresh, fruity wines are made along the Loire. In Sauternes, the grape is blended with the sémillon. Sauvignon blanc spread to the rest of the world through migrants in the 18th century. In wine regions with a temperate climate, the grape feels at its best. Sauvignon Blanc, locally called Surin, is one of the oldest grape varieties planted in France. Sauvignon Blanc has a characteristic perfume of flowers and gooseberries, is spicy but can be both astringent (around the upper Loire) and plump and round. The wines usually have high acidity
