Zevenwacht 7even Cabernet and Franc rosé. Cab Sauv and Cab Franc rose from Stellenbosch, South Africa. A very elegant, salmon pink rosé with aromas of rose petals and strawberries. With a fresh and pleasant aftertaste, this is a very smooth and pleasant wine experience.
74% cabernet sauvignon and 26% Cabernet Franc that was fermented at a low temperature for a pleasant freshness. Superb wine to serve at a summer picnic, as an aperitif on a terrace or with pasta salads with crisp and fresh vegetables. Cabernet Franc is a fairly productive variety. It is in fact the original cabernet grape. The much more famous Cabernet Sauvignon is a descendant of the Cabernet Franc. It probably comes from Bordeaux where it is one of the classic components of Bordeaux wines. In the 17th century it was taken to the Loire Valley where it was subsequently successfully planted. Cabernet Franc likes calcareous gravel, sand and clay soils and ripens about ten days earlier than Cabernet Sauvignon. It thrives very well in cooler soils. At its best, Cabernet Franc has an unmistakable and appetizing aroma of raspberries and pebbles washed in spring water and a refreshingly tart scent of blackcurrant leaves. This aroma stimulates the taste buds. Cabernet Franc is used successfully in Bordeaux where it is an important player, especially on the soils of Saint-Émilion and Pomerol. He is also very successful in the Loire and more specifically in Chinon Saumur-Champigny and Bourgeuil. The grape is also used in the south of France, Italy, California, Australia, New Zealand, Chile and South Africa. It is often used to mix with cabernet sauvignon. Cabernet sauvignon is the most famous grape of all. He is therefore rightly called King Cab.

Cabernet Sauvignon is best known in Bordeaux where, together with Merlot and Cabernet Franc, it produces high-class wines. It needs a lot of warmth to ripen, otherwise it becomes green and juicy with a taste of green pepper. Too much warmth makes it soft and jammy, with a taste of blackcurrant. Cabernet Sauvignon produces very aromatic wines with scents of blackcurrant, vanilla, spices (pepper), tobacco, plum, cherry, toasted bread and cedar. The wines usually have a long shelf life, contain a lot of tannin and should in principle ripen in barriques. By applying modern vinification techniques, young wines can now also be drinkable quickly. In general, the wines have a high phenol content, they are purple (young) or dark red (old) and have a lot of power and structure. Cabernet Sauvignon can be found all over the world. Wherever someone wants to make a ‘serious’ wine, Cabernet Sauvignon is planted.
