Zevenwacht The Tin Mine Classic White. Viognier, Chardonnay, Rousanne and Chenin from Stellenbosch, South Africa. Ripe and exotic, rich wine with spice and subtle wood with hints of toasted almonds. The Chardonnay gives nice lime, the Viognier provides the delicate touch of dried apricots while the Rousanne and the Chenin provide the finish.

Chardonnay, the grape of white Burgundy and Champagne, is planted all over the world. Delivers good to very good wine with a full, dry taste. Chardonnay is a grape that does not have a clear character, which depends on the terroir (soil and climate) and the method of wine making. Chardonnay lends itself very well to maturing in wooden barrels.

Chenin Blanc a high quality white grape from which one can make stunningly beautiful sweet wines in the Loire, such as Bonnezeaux and Quarts de Chaume. Locally the grape, as well as the wine, is called pineau de la loire. The relatively neutral character of the grape and the high acidity that provide a fresh impression. The grape is sensitive to noble rot by the fungus Botrytis cinerea. Also important in South Africa (known as Steen) and in California.

Roussanne, this white grape is planted in the northern part of the Rhône (greatly increased in the 1990s). The wines have a surprisingly elegant texture, with a spicy and mineral perfume. They are more fragrant than that of Marsanne, also a grape that in the Rhône. However, these two grapes are often mixed, because the yield of Roussanne is uneven.

Viognier, an extremely vulnerable white grape of very high quality that forms the basis of Château Grillet and Condrieu. This grape is also allowed up to 20% in the red Côte Rôtie. Viognier produces a delicate, softly scented white wine. More and more quality-conscious wine growers are planting Viognier and as a result their white wines usually increase enormously in quality.
