Diemersdal privat Collection from Cape Town, South Africa. Cabernet Frank, Cabernet Sauvignon, Merlot and petit Verdot. Deep dark chocolate and cedar aromas first appear on the nose, followed by notes of blackberry jam, cherry and cassis. The firm, well-structured palate has robust yet sweet tannins and a wide range of flavours, ranging from black cherry and red fruit, carried by the richness of the oak and vanilla notes. It is long and soft, with an intriguing character that will continue to develop over the coming years. It is long and soft, with an intriguing character that will continue to develop in the coming years Cabernet Sauvignon is best known in Bordeaux where, together with Merlot and Cabernet Franc, it produces high-class wines. It needs a lot of heat to mature, otherwise it becomes green and juicy with a taste of green pepper. Too much heat makes it soft and jammy, with a taste of blackcurrant. Cabernet Sauvignon produces very aromatic wines with scents of blackcurrant, vanilla, spices (pepper), tobacco, plum, cherry, toasted bread and cedar. Usually the wines have a long shelf life, contain a lot of tannin and should in principle mature in barriques.

Cabernet Franc is a fairly productive variety. It is in fact the original Cabernet grape. The much more famous Cabernet Sauvignon is a descendant of Cabernet Franc. It probably originates from Bordeaux where it is one of the classic components of Bordeaux wines. In the 17th century it was taken to the Loire Valley where it was subsequently successfully planted. Cabernet Franc likes chalky gravel, sand and clay soils and ripens about ten days earlier than Cabernet Sauvignon. It flourishes very well in cooler soils. Merlot is one of the oldest Vitis vinifera varieties that ripens earlier than Cabernet Sauvignon and Cabernet Franc. Merlot is important in Bordeaux, especially in Saint-Emilion and Pomerol. The planting of Merlot has increased considerably in recent years. The grape is very popular worldwide and people are increasingly realizing that Merlot should be planted in a fairly cool vineyard. This grape gives dark, cool, soft, spicy and fruity wines. Petit Verdot is a late ripening red grape that does not always reach its full ripeness in the Bordeaux climate. This grape variety does not take up more than 2% to 3% of the surface of the Gironde vineyards. Especially the most renowned areas use Petit Verdot in their blends. However, the grape remains highly valued by winemakers for its contribution to acidity during the warm years. It can then balance out the other grape varieties that produce too high levels of alcohol or sugar.
