Domaine Durand Perron Tradition, Savagnin von Boilley-Fremiot aus Jura, Frankreich. Here, the wines are vinified in 228-litre barrels, but these are not topped up and a “voil” develops, similar to the “flor” in Sherry, resulting in an oxidative wine. Savagnin at its best : very spicy (pepper and curry), notes of wood and very fine notes of ripe nuts and almonds.

Savagnin, a white aromatic grape variety from the Jura of high quality, among other things for the production of the sherry-like wine Vin jaune, a specialty of Arbois. White wines from both the Chardonnay and Savagnin are also produced in that region. The character of the wines from the Savagnin is aromatic and rich in extract, with impressions of nuts and wax clearly present. A close relative of the Savagnin is called the Clevner de Heiligenstein in Alsace.
