Château Sérame is a historic Languedoc estate whose origins date back to Gallo-Roman times. It is located in an unspoilt natural setting bordered by the river Aude and the Canal du Midi. It lies at the confluence of two appellations: Corbières and Minervois. With the arrival of Aymeric Izard as vineyard manager in 2020, the vineyard has undergone a real qualitative transformation. The 200 hectares of vines have been 100% organic since 2010,

The grape varieties that make up Château Sérame Rosé 20202 are harvested at dawn to take advantage of the lower temperatures and preserve their greatest aromatic potential. Na de directe persing gevolgd door een koude bezinking, vindt er een langzame gisting plaats gedurende 15 tot 18 dagen bij 18°C onder gecontroleerde temperaturen. The wine matures on lees and is stirred regularly.

Grenache noir, in full grenache noir à jus blanc, which can withstand extreme heat, originates from Spain and is called Garnacha tinta there. The grape has a thin skin with little pigment and is therefore widely used for making rosés. Used in the east of the southern Rhône in the blend with other grapes, including: Cinsault, Mourvèdre and Syrah. Grenache noir provides fruit, roundness and can produce very accessible wines with few tannins and low acidity. The advantage of this grape is that it thrives in a dry, windy environment such as the Rhône Valley (Mintral wind). The disadvantage is that the grape is very sensitive to oxidation. In Sardinia (Italy) the grape is called Cannonau. Syrah, a strong blue grape of very high quality. This grape is usually not easy for wine growers, but it is the seasoning for many Côtes du Rhône Villages. Delivers incredibly powerful and complex wines under optimal conditions. Have a high tannin content, without being stiff. The Syrah grape quickly suffers from poor fruit set in cool weather during flowering (coulure) but is not very susceptible to grape diseases such as Oidium.
