Bodegas Hnos del Villar Valdelapinta Verdejo

Bodegas Hnos del Villar Valdelapinta Verdejo from Rueda, Spain. Fine aromas of tropical fruit (melon and passion fruit), with many green tones, like grass and boxwood. Very fruity and pleasant wine with a soft and clean finish.

The verdejo stem is a plant that easily adapts to infertile and stony soil and tolerates drought well. It produces bunches of small to medium sized grapes, compact and with a very short stem. The grapes are spherical, small to medium in size with medium thick skin, green-yellow in color and with large seeds. The grape is usually harvested at night in the month of September due to the high daytime temperatures, which can reach maximums of 30 degrees Celsius. This prevents the juice from darkening due to oxidation caused by heat.

I like to serve pasta vongole with this, with extra roasted garlic, chipotle pepper and parsley ( and if you like it, add fresh cilantro too). Of course with the wine generously quenched, and lightly boiled down. Top with deep-fried dry (on salt) capers
